Cocoa Butter comes from either whole Cocoa Beans or Cocoa Liquor (also known as Chocolate Liquor). Chocolate liquor is compressed to separate the cocoa butter from the cocoa solids. It is used to make chocolate, biscuits, and baked goods as well as some kinds of pharmaceuticals, ointments, and toiletries.
Uses
Milk and sugar are added to make White Chocolate, but most of it is used to produce Milk Chocolate, some of which contains more cocoa butter than chocolate liquor.
Cocoa Butter is one of the most stable fats known, containing natural antioxidants which give it a life of two- five years.
